Rosemary honey

The rosemary is a wild plant that can be mainly find in the Mediterranean area. The rosemary honey production depends on the weather conditions in late winter and early spring. The flowering of the Rhododendron occurs between November and May, the peak being the month of April. The honey is harvested in May.

The ancient Romans though that this type of honey was the best in the world. It is white and in spite of its delicious taste, it is rarely commercialized. It has a low content of water (17% of its composition). Its Ph is almost 3.8, the acidity has a low level and it is not very rich in minerals.

It is used to treat hepatic insufficiency.
